"Banana Bread" Oatmeal

Tastes like a warm piece of banana bread right out of the oven...comfort food for breakfast that's good for you!

Is your New Years resolution to eat healthier wearing off? It's getting closer to spring, but then you look outside and it's still cold and possibly snow remaining on the ground...so you desire something warm and yummy instead!
How can something warm and yummy be healthy too? Is that possible?
The only way a person will start or continue on a healthy eating plan is if the food tastes good. I will share my favorite oatmeal recipe that tastes like warm banana bread, but is wheat-free, gluten-free, and loaded with nutrients!
Recipe for "Banana Bread" Oatmeal
1/2 cup steel-cut oats (gluten-free)
1 cup milk or soymilk or almond milk
1/2 banana chopped into small pieces
1 T. ground flaxseed
1 T. chopped walnuts
1/4 t. cinnamon
Combine oats, flaxseed, walnuts and cinnamon in a bowl and mix to blend ingredients evenly. Add chopped banana and milk (or soymilk/almond milk). Stir until dry ingredients are moistened. Heat in microwave for 1-1/2 minutes. Stir ingredients in bowl. Heat for another 1 minute or until bubbling warm. Enjoy this comfort food as is, or add a kick with a handful of fresh berries to boost your morning antioxidants!
